According to the Bootstrap documentation there are multiple panel styles. Can all of them be included with Bootstrap Studio? Seems as if only one style is currently there.

Everything you see there should be available in BSS. Most of that you will find in the Options panel (top right) of the app.

haha no worries, takes a bit to get familiar with the app. Once you do you'll have a better idea of where things will need to be edited for which elements. Some will have settings there and some won't. Custom Code blocks won't ever have settings there so that part you will always know from this day on, but the rest just depends on what type of element it is. There and in the Attributes part in the bottom panel is where you'll do at least 75% of your changes, the rest will be in the code in some way. Enjoy!
